| If you put the exchange on the stack, could you then sacrifice your creature in response to any sac outlet and still gain control your opp. creature? |

No, rdeg is right.
If either one of the targets becomes illegal (because it leaves play or for any other reason) by the time the ability resolves, the exchange won't happen. If both targets become illegal, the ability is countered.
That is coming straight from the wizards site. |

| This is like porphry nodes. You can't sac a creature to nullify the effect. You have to choose a different one. Puca's mischief doesn't target, so you would still have to exchange one. |

Puca's mischief actually does target
At the beginning of your upkeep, you may exchange control of target nonland permanent you control and target nonland permanent an opponent controls with an equal or lesser converted mana cost.
So if one of those targets becomes invalid the ability is countered, and if targets are already chosen and one of then becomes illegal, you cant choose another. |

Ok, several things:
1) When one half of an exchange is gone, it won't do anything.
Exchange
A spell or ability may instruct two players to exchange something (for example, life totals or control of two permanents) as part of its resolution. When such a spell or ability resolves, if it can’t exchange the chosen things, it has no effect on them.
Example: If a spell attempts to exchange control of two target creatures but one of those creatures is destroyed before the spell resolves, the spell does nothing to the other creature. Or if a spell attempts to exchange control of two target creatures but both of those creatures are controlled by the same player, the spell does nothing to the two creatures.
2) @Doobie_Man: An ability is only countered if all the targets are illegal. If at least one target is still legal the spell or ability resolves and tries to do as much as possible to the legal targets. |
