Would you have two copies of the spell countered?

It is a replacement effect, so no.

It's not so much the fact that's a replacement effect that stops you getting double the effects (just look at Doubling Season which works fine in multiples).

What does stop it however, is the fact that if the first replacement effect has replaced the countering the second doesn't have anything left to replace and thus fails to do anything. Therefor you will only get to play the spell once.

yes the first replacement establishes that the spell ISNT countered anymore. The second Guile cannot replace a countered spell since there is none.
